Also known as Moong Bean Soup or Deagu.
1 cup green grams, soaked overnight
1 tsp salt
1 onion, chopped
1 tomato, chopped
Add the other ingredients to the soaked beans and simmer until soft or until the beans are tender. Serve with chapatis or over rice.
Makes 2 servings.

In Kenya, generally legumes are soaked overnight in order to conserve energy use. Frequently, charcoal or kerosene is in short supply, so we do what we need to do to limit the consumption of fuel.
Of course, where fuel is more plentiful, boiling until soft is another way to go.

The method of cooking is simple and nice but we can make it just a little ‘yummier’. to all those ingredients, add 2 medium size carrots crushed and curry powder. The cooking process remains the same but instead of soaking we will need to boil till soft. ENJOY!
