1/2 cup millet seeds
2 cups boiling water
1/2 cup peanut butter
2 tsp oil or ghee
2 tsp soy sauce
1 small onion, chopped
1/2 green pepper, chopped
a few cloves garlic, finely chopped
Cook the millet by adding it to the boiling water. cover the pot and cook until millet is soft (45 minutes to 1 hour) and all the water is absorbed. Sauté onions, pepper, and garlic in oil. Add this to the cooked millet. Also add peanut butter, soy sauce and desired spices. Mix the concoction well. Divide it into 4 parts and form patties. Brown the patties in a lightly buttered pan.
Makes 4 patties.

All Things Kenyan (mod) said: Try doubling the millet seed and maybe leaving out the oil. The peanut butter should hold things together.
A lot of African recipes really don’t have precise measurements and need some tweaking.
cook said: I tried this recipe but the patties were way too goopy and never stayed together. When I pan-fried them they stuck to the pan and were basically impossible to keep in any kind of shape.
