Spiced Kidney Beans Recipe

1 cup kidney beans, soaked overnight
1 onion, chopped
2 – 3 cloves garlic, chopped
1 tsp whole cumin seeds
1 tsp oregano
1 tsp salt
1 tsp garlic powder (optional)
1 green pepper, chopped
4 tomatoes, chopped

Add the onions and garlic to the beans and begin to boil. Add the spices except garlic powder. Cook until tender adding water as needed. When there is about 20 minutes of cooking time left add the rest of the ingredients.

Spoon mixture on chapati or naan, top with grated cheese and chopped vegetables.

Makes 2 servings.
