1/2 cup garbanzos, soaked and cooked until tender
1 Tbsp vegetable oil
1/4 tsp cumin seeds
1/2 tsp turmeric
2 tomatoes, chopped
1 medium onion, chopped
2 cloves garlic, finely chopped
piece of ginger, finely chopped
Heat oil and add cumin seeds and turmeric. When seeds begin to pop add the onion, garlic, and ginger. Once the onions are translucent, add tomatoes. Add cooked garbanzos and heat the mixture carefully trying not to mash the beans. Add cayenne pepper, and salt. Mix and serve. This dish tastes good with a squeeze of lemon juice, but is not necessary.
